Canava Roussos, the oldest  canava (winery) in Santorini, was founded in 1836 with the aim of producing high-quality wines that uniquely express the character of the island’s numerous indigenous grape varieties. Decades of experience have been passed down from generation to generation, ensuring that the art of Santorini winemaking is expressed with consistency, continuity, and utmost respect for tradition.

 Today Canava Roussos, faithfully following the island’s traditional winemaking art, combines it with modern technology to create wines of distinctive flavors and aromas, selecting only premium grapes from Santorini’s finest varieties: Assyrtiko, Athiri, Aidani, Mandilaria, and Mavrathiro.

 Vinification: The very ripe grapes are sun-dried for 15 days and then fermented under controlled conditions. The Vinsanto ages in oak barrels for less than one year.

 Tasting Notes: Deep honey color with golden hues. Rich aromas of dried fig, plum, and nuts, complemented by notes of caramel and vanilla. A delicate sweetness balanced by the vibrant intensity of citrus fruits that dominate the finish.

 Serving Suggestions: Serve at 8°C, paired with nuts, fruits, fruit-based desserts, chocolate desserts, or simply enjoy it as an aperitif.
