The History
Since 1997 Hatzidakis Winery was founded in 1997 by Haridimos Hatzidakis and Konstantina Chrysou. The two met and fell in love while working at the Boutari Winery in Santorini (which operated at the time). He was the Head Oenologist and she was the Hospitality Manager. Everything began when Konstantina showed Haridimos a neglected vineyard owned by her family, located at an altitude of 330 meters in the village of Pyrgos Kallistis. There, they found a cave, which they transformed into a small winery!
2000
In 2000, they purchased a vineyard which had a rather large cave underneath it. That cave became the winery’s cellar.

2016
In 2016, the Hatzidakis Winery was relocated to that exact location, on the provincial road between Pyrgos and Emporeio, into a fully underground facility. This allows the winery to naturally maintain an ideal temperature — in other words, perfect conditions for winemaking and wine maturation.

2017
Since August 2017, after the shocking loss of Haridimos Hatzidakis, Stella, Antonis, and Ariadni — together with their mother Konstantina and a team of young, talented people — have carried on with even greater passion, “holding their heads high.” Always guided by the philosophy of the late Haridimos and with deep respect for his methods.
2025
The winery’s dedicated team continues to produce high-quality wines, in limited quantities, focused on expressing the island’s terroir through the indigenous varieties of Santorini. All fermentations are done exclusively with native yeasts. The wines are bottled without the addition of clarifying agents and are unfiltered

Today, the winery remains family-run and fully underground, offering ideal natural conditions for fermentation and aging. Every wine is made with indigenous yeasts, minimal intervention, no filtering, and no additives, allowing the true character of Santorini to shine through. Limited production. Deep respect for nature and tradition, dedicated to Santorini’s indigenous grape varieties. Each bottle tells a story, pure, bold, and unmistakably Santorini.
