Head Winemaker: Panos (MSc Chemist–Oenologist, DipWSET holder, WSET instructor, and wine writer)
Situated in Kalomodia village near the Ambracian Gulf and Arachthos estuary, the vineyards benefit from a Mediterranean climate moderated by cooling Ionian Sea breezes. This unique geography provides ideal conditions for producing elegant and expressive wines.

- Konitsa Vineyard
- Latitude: 40.02°N
• Altitude: 450–600m
• Soil: Gravel
• Varieties: Gewurztraminer, Debina, Chardonnay, Sauvignon Blanc, Merlot, Vlahiko, Bekari
• Features: Historic slope vineyard with cold air movement and ideal sun exposure.
JIMA’s vineyards are managed with deep respect for nature and biodiversity. Practices include cover crops, natural vegetation, the use of animal manure, and manual pruning and harvest. No herbicides or pesticides are applied, ensuring sustainable, healthy ecosystems.
Cellar Practices
The winery employs a diverse range of fermentation vessels and ageing techniques. Long maturation and careful blending yield wines of balance, elegance, and longevity.
Key cellar practices include:
• Open-top fermentation
• Intact berry and whole-bunch fermentation
• Appassimento and skin maceration (especially Debina)
• Amphora rosé maturation and precise barrique management
