Château l'Hospitalet is nestled in the heart of the protected massif of la Clape, an ancient link in the Pyrenees chain, a Phoenician and then Roman island, the cradle of the vine in France. As early as the 13th century, the Hospices de Narbonne moved to la Clape, linked to the continent by the alluvial deposits of the Aude since the end of the Middle Ages. Documents from 1561 attest to its mission of welcoming and sharing with pilgrims. This vocation of hospitality has inspired Gérard Bertrand who has made l'Hospitalet the beating heart of his action around the Mediterranean art of living since he acquired the property in 2002. Today, the Château has a hotel, a gourmet restaurant, a tasting and sales cellar, an Art Space and a rich offer of sensory tours around wine. Music was missing: in 2004, the château hosted the first "Jazz à l'Hospitalet" festival, which has now become an international reference. 

 

 

Nauture, the setting of the "L' Art de Vivre"

La Villa Soleilla

With its 11 suites, swimming pool and spa, is the ultimate residence of the Resort. A must. We recharge, we relax, we get drunk by nature. Outdoors and indoors. From 40 to 96m2, all equipped with king size and basins in the bathrooms, the suites have annexed the landscape: a refined, elegant, refined decoration. Raw and smooth wooden furniture, fresh light travertine floor just dressed in fluffy round carpets, white walls, large bay windows for the permanent guest sun. Soft green, olive, beige and a palette of terracotta, old pink, brick, his, scorched earth.

These warm and soft hues delicately color a wall of each suite where a natural wooden claustra surrounds the headboard. The suites' long terraces or private gardens house a seating area and two sunbeds, for a fresh breakfast like a morning or a meditation session listening to the silence.

At the Château, 17 beautiful suites and 13 comfort rooms (minimum 30m2) are scattered in the three buildings on both floors, park or vineyard view. A decoration barely more colorful, dynamic but the natural remains the common thread.

 

 

Parquet floor for all rooms, sofa seating area for suites, easily accommodating a family, the omnipresent light is just tamed by double pastel curtains. Some suites have their small private garden facing the park, one with jacuzzi, others are duplex, some can be privatized by two and those of the red ochre building, very Tuscan, overlook the sublime alley of olive trees.

Chez Paule, Rotisserie and local cuisine over a wood fire

Inspired by Paule Bertrand's Languedoc recipes, chef Laurent Chabert offers a local menu, composed of dishes simmered in a casserole, grilled and roasted over a wood fire. The kitchen is invited into the room for a show cooking in front of the guests. Local and seasonal products are selected from attentive local producers who share a taste for excellence. Aubrac meats, farm poultry and fishing of the day of Gruissan are offered piecemeal. Grilling, buckling and cutting face the room on the fireplace counter. Selected woods including vine stumps allow delicate smoking. Elegant period tableware decorates the tables. Soup bowls and serving dishes also at the beginning of 1900 allow you to share gourmet dishes such as Lapin Chasseur, a signature dish, what a pleasure to reserve delicious sauces!

 Dish and wine of the day are also offered on the slate to enjoy the market, the seasons and inviting to discover new associations of terroir.

 Located near Narbonne, on the Occitan coast, in the magnificent setting of Château l'Hospitalet,in the middle of vineyards and protected scrubland, in the heart of the natural site of the Massif de la Clape, the gastronomic restaurant l'Art de Vivre enjoys an exceptional environment. Nestled in the middle of Gérard Bertrand's wine estate, great wines and appellations have a prominent place here. A true showcase of the Mediterranean art of living while incorporating a touch of modernity, the dishes are refined, colorful and fragrant, the cooking perfect and the dressings harmonious. The restaurant honors the organic and the local, while respecting the seasonality of the products. This delicate and light cuisine is always made in accordance with the great wines of Domaines Gérard Bertrand

 

A modern and creative Chef, attached to the terroir

 Chef Laurent Chabert has been at the head of the restaurant since 2014.

His talent, humility and love of terroirs make this son of an Auvergne breeder an outstanding cook in the design of gourmet dishes.

He began his career in Corsica and then in a Michelin-starred restaurant in Val d'Isère. Nourished by all these experiences, he puts his suitcases at the Castle, a place that resembles him. He discovers the beauty of the estate, the preserved nature of the Massif de la Clape and the Narbonne coast. He then develops the pleasure of working with local and organic products, cultivating his own vegetable garden and picking aromatic herbs in the massif.

Accompanied by the Pastry Chef and his brigade, Chef Laurent Chabert creates a creative cuisine, highlighting the Languedoc terroir and biodiversity. Inspired by the calm and serenity of the place as well as the omnipresent nature, the Chef puts a particular emphasis on the plant world on his plates. The use of edible flowers, aromatic herbs or berries is one of his trademarks.

 

 

The choice of local and seasonal products

 The Chef selects the best local suppliers in order to be able to serve the best possible quality to his customers. The vegetables all come from the Occitanie region. Some vegetables and aromatic herbs come directly from the Vegetable Garden of the Château or the Clape massif. 

The restaurant serves Aubrac beef, Pyrenean lamb and Catalan sausage, Gruissan eel and of course fish caught in the Mediterranean Sea. Working to the maximum with organic products, the Chef makes it a point to respect the rhythm of the seasons in the choice of products worked.

The restaurant l'Art de Vivre has obtained the Michelin Plate and two cutlery in the red guide. The Michelin plate is a distinction rewarding the quality of the products and the know-how of its chef. The two seats reward the quality of the welcome and service, the comfort, the cleanliness, the setting and the atmosphere of the restaurant.

Gault & Millau, another famous gastronomic guide selecting the best French restaurants according to strict criteria (cuisine, atmosphere and general experience) has rewarded the restaurant with two Toques, an honorable rating attributed to the real Chef's Tables. Finally, Chef Laurent Chabert holds the title of Master Restorer.

This certification is the only title awarded by the State for French catering. This title rewards the professional skills as well as the commitment of the Chef to work with raw and fresh products.

 

 

 

In parallel with the gastronomic table, the catering offers Cote Terrasse - Cote Patio

in the pleasant and warm setting of the Château l'Hospitalet estate, and always selecting local Occitan products, the Chef invites you to enjoy a simpler but still refined restoration:

  • On the patio side, for aperitifs in food and wine pairing (cheeses of the region, olivade, cold cuts, etc.).
  • On the terrace side, fresh plates and light delicacies are served (club sandwich, gazpacho, fruit plate, ice cream and homemade sorbet, etc.).

With "Les vendredis du jazz", the restaurant l'Art de Vivre welcomes you every week for a gourmet and jazzy evening during a dinner-concert. During this dinner with musical entertainment, you will enjoy gourmet dishes in food and wine pairings.
